4 cups mixed greens
½ cup red onion, finely sliced
½ cup chevre, crumbled
¼ cup sliced almonds
2 slices bacon, crumbled (optional)
2 cloves garlic
½ cup white wine vinegar
¼ t. Kosher salt
¼ t. freshly ground black pepper
4 Medjool dates, pitted
½ cup extra virgin olive oil
In a small bowl, combine white wine vinegar and dates. Cover and soak in refrigerator for 10-15 minutes.
In a blender, combine all vinaigrette ingredients except for oil. Blend slowly, adding oil in a thin, steady stream until combined.
Gently toss greens in vinaigrette. Spread greens on a serving platter. Top with onion, chevre, almonds and bacon (optional) and serve.
